I wouldn't call it "unremarkable"... it's a very good restaurant and I have friends who swear by it... just not my cup tea (at at $800 for 2 ppl I'd rather be drinking my cup of tea!) Also... EVERY restaurant has off nights (like what was described above with mixing waters and mis-drops). They are human after all. Stuff like that doesn't bother me too much as long as the food is good, and there is some sort of service recovery attempted. But I can understand how that kind of thing is vexing given the high price point of EMP in particular....
Oh, undoubtedly it is far from bad. While definitely a first world problem, something like the water issue would piss me off. It’s not a big deal, but when you think about it a totally careless and completely avoidable gaffe like that would make me wonder what else might be wrong that I did not know about. And, as this is New York, if a waiter or a waitress expects a twenty percent tip on my expensive meal, I think it’s reasonable that I should expect my water to be poured from the correct bottle that I should be attentively looked after.
Plus, I’d rather just go out in Japan for the same amount of
money and have a better experience.
