The Monday SFO-AKL flight is arriving on Wednesday morning (since it's +2 days), so you've spent a workday in SFO and arrive midweek in AKL. It's not the most popular way to get there, although the Tuesday flight tends to be even lower demand. Most US-based business travelers are going to be flying on Saturday (to be with a client on Monday morning) or Sunday (to keep their weekend).

UA heavily relies on their predictive model; they're more pessimistic about selling 40 seats on a Tuesday than 55 seats on a Friday, and potentially with good reason. If October 12 rolls around and they still haven't caught up, they'll start dropping the I space.
