Having lived in the Middle East quite happily for several years I also get the feeling we only have on side of the story here. UAE customs and immigration sigh heavily when they have to go through the effort of lifting the passport stamp and flicking through the pages of the passport, so for them to actually become upset enough to take action against this lady would take some real effort on her part IMHO. It's also important to appreciate the GCC culture is generally non-confrontational and even swearing (i.e. fingers up at someone through road rage) is a serious offence.
If she arrives with the wrong visa than that is her fault, not theirs. If she then loses her temper with them, thats her behaving inappropriately, not them. Man or woman you can debate and discuss with UAE officials, but losing it and misbehaving is a sure way to escalate things quickly.
Whilst the justice system in the UAE is far from perfect and is quite different from the West, there are often some omissions in Western articles relating to how people actually get a arrested in these countries. It's certainly not in the UAE's interest to deter tourism and paying Emirates pax.
