Don't these hotels use dried egg powder for scrambled eggs. Don't think you're missing much even if they take out scrambled eggs from the menu.
I've actually seen the liquid egg mixture in a clear plastic bag which they boil and then cut the bag open and voila ... scrambled eggs!
