I see this as
1. You bought a ticket to FL
2. AA let you use the credit to book a ticket to London, without a change fee, because your mom died
The new ticket has fees for changes.
3. Now, you want to change the ticket to London and AA wants to charge a change fee.
If this is correct, I don't understand the problem. You got a free change when your mother died, and now it sounds like you are asking for another free change.
Was the agent "rude and not helpful" because they didn't agree with you?
Can you change the date of the headstone arrival or have someone else receive it, and keep your original trip to London?
I do not see the reason you expect AA to not charge you a change fee for this
