Is your hotel in Paris or at CDG?
The super early flights at CDG go very quickly, both for check-in and security. When I have taken such flights (and I was an airline employee for 35 years!), I was always there too early, but it's all about piece of mind, isn't it?
For a 6:30 flight, 5:30 is more than sufficient. The business people will still be walking up for check-in totally calmly at 6:15.
