Banff Fishing Unlimited. They came highly recommended to me by some friends. They're 'old school' in that they don't have online booking on their website. You have to phone them, and they'll check their schedule book and give you a verbal confirmation. Or, the concierge at Banff Springs can book it for you.
I'm not as knowledgeable about Le Chateau Frontenac, as I've only stayed there maybe 4 times, and only once since their big renovation. It is good value using certificates there, as it can get expensive in the summer months.
