I will usually pour the first drink as a double upon request and singles after that. I have as much responsibility as a bartender does to make sure that you don't leave my plane in a condition which may impair your driving abilities. True, you might be connecting to another flight and not getting into a car, in which case I have a responsibility to the next crew to be sure that you don't arrive at their airplane intoxicated (at least not because of MY overserving you). To sum it up, I want my customers to enjoy their flight and have a nice time but I have a responsibility to that person to make sure they don't leave my aircraft intoxicated.

As for the whole can thing. If someone asks for the can we will give it to them. Other then that we pour. Our cups, while hardly "Dixie cup" size are not 7-11 "Big Gulp" size and some people want more than that, which we are happy to accomodate. We used to just hand people a can and a cup of ice, which we always thought was percieved as being "generous" and nice. Frankly, I think it just looks lazy, as though we didn't want to take the time to serve their customers. We also used to pick up ALOT of half full cans of soda in the garbage, which is rare since we now pour.
