I agree with Often1: I have flown on several occasions at different times of the day on Thanksgiving--it generally is very light (and usually the fares are pretty good) and the crews generally are pretty happy. That being said, there is no guarantee as to traffic on a particular route or a particular crew's mood, especially with dynamic pricing. YMMV.
