Here is today's meal on HEL-CPH . Everything in order upon serving it and purser also wanted to present the meal to me, which we all think is a good idea because they no longer have the menu cards. Anyway, meal was presented as "this is chicken" (and I am sure that was all purser knew, so why not get the menu cards back, ey?)
So, let the guessing game begin!
Starter is a regular salmon, with grass tasting leafs and mustard seeds. Hidden underneath the salmon is a rather clever cabbage salad (coleslaw style) with grated horseradish in the mix. Salmon was a bit vanilla, but the overall impression was very good. IMO, the dish deserved a different green, perhaps som cress would have topped it of perfectly. This sharp, raw grass taste greens let the dish down entirely.
Main course was as already told "chicken" but the rest? My first guess on the yellow dollop was placenta, err sorry, polenta. But man was I wrong. It was a saffron rice pilaf. Tasty, and worked extremely well with the green stuff, as there was something sweet in the greens to balance and complement the saffron. However, as the pilaf was the staple, there wasn't enough green to go with all rice and so I felt the saffron taste was a bit much in the end. Still, a million times better than the barley stuff they used to put on every dish.
Brown stuff was sauce (perhaps with mushrooms?) and green stuff unknown to me, with some different seeds. I can't tell what the sweet in the green was either, it was like apple a bit. Chicken was breaded and decently tender, but the thing that left an impression was blending the rice and greens.
Dessert is blueberry "pie", but with a dry and soft texture, like taking shortcrust or puff pastry dough and not fully bake it. (We used to make similar pastry when I was younger, but more in style of
cookies, with currants as the "berry", and if one didn't bake them fully they got this soft texture)
