For certain AC meal items, such as NA breakfast, salad, cheese on outbound flights, and that famous Hawksworth chocolate cake, seemed to be decided years ahead.
Oh I have no doubt things are well planned from a catering perspective for certain airlines, and I too have seen that SQ video/documentary. I'm not so sure AC has it all figured out though.
