Sort of the approach Air Canada takes with their YVR Maple Leaf Lounge - breakfast until everyone rushes out to board the Asia departures, then out come the hot food trays.

I understand there needs to be a reasonable balance, and I think 11AM rather than 1145AM is probably a better option so more people can choose lunch before boarding.
