You can use the excursionist perk to do something like EWR - KEF (stopover) - DUB - EWR. It should price the same as EWR-DUB return. However, practically speaking, you may find yourself flying to the continent and then back to Iceland due to award availability.
Best value in miles per dollar would be to redeem for business class travel. However, that may be exceedingly difficult for 7 passengers. You might be able to find availability in economy.
