Also, do I need an adult chaperone at Amsterdam airport, even though by easyJet’s rules I am an adult and can travel alone?

You are fine. At 16, you do not need a chaperone and do not need any additional info.
I would really advise against taking the bus though unless none of the flights or train options are affordable. Make sure you've checked Skyscanner/Momondo and Eurostar - there are
lots of options.
