UPDATE: Moving along....
Finally got my approval today (6/16/18 at 11:06am) after waiting for 3 weeks and one day (compared to wife's 5 day wait for approval). Next step is the interview on 6/20/18 (first available). Wife has a interview (first available at the time, same location as me) scheduled on 6/22/18 even though she was approved sooner.
You can try to reschedule your wife's interview on the same day as you. If you are unable, have your wife go with you to your interview, ask nicely if she can also be interviewed with you for her Global Entry application.
