Yes, I had to select my tip before presenting payment. (For what it’s worth, they use Elavon. “Secured by Elavon” prints on the charge slip.)
The server had trouble with the “tip by percentage” function and had to cancel the whole thing to try again. He also was uncertain about me tapping my phone, despite the screen showing the Apple Pay glyph.
