Great chinese can be found at the Empress in Chinatown(dim sum during lunch-very high end Cantonese at dinner)VIP sefood in west LAand a new place right across from the masonic auditorium in San Gabriel-Mission 888 or something like that.
If you MUST have "white folk"chinese then the Plum Tree on Hill,or Buhddas Belly on Beverly are very good choices.Fat Duck can be Great-If you hit it on the right night,otherwise just OK.
Oh and Ocean Star is pretty good also.

And I second Yujen Kang in pasadena-Just leave yourself in the chefs hands,he is an artist and loves to impress.
