This is not intended to sound harsh, but this is hardly something to get so upset about. If your Mum must absolutely get back on the day originally booked, then ask for a full refund, and book another ticket elsewhere.

It's usually best to book directly from the the airline, rather than going through an online booking agency. At times like this, you are better able to deal with someone to get your ticket changed/resolved. (That said, dealing direct with Norwegian may not be much fun either).

If, on the other hand, there is no pressing need for your Mum to be back on the day originally booked, then look at this as an extension of the vacation. 2 nights in a hotel isn't probably going to cost that much, especially in October. Norwegian *should* pay for the extra 2 nights, but as others have pointed out, this may prove difficult. But beware that you/she may find further changes are made to this ticket/route, if she sticks with Norwegian.

No, there is no need to input passport information so far in advance. If you/she is being contacted separately to input passport information, this is completely separate to your current issue, and you can safely ignore this.
