For example, DFW/LAX to Asia attract the most senior flight attendants, as do transcons. That's not equivalent, however, to the best service. For example, I recently had a legacy US CLT crew on an A330 flight to Europe. The two flight attendants in J told me they had been working the same flight to London together for over 20 years. Service was excellent! I also had a legacy AA crew on a 77W flight from LAX to HKG. They seemed pretty senior but have no idea since they disappeared after serving the meal and I had to go find them if I wanted a drink.
That being said, on a LAX-BOS redeye, I think they can get really senior crews since most of us don't really want service.
