Turns out they could. It wasn't easy as I wasn't allowed to email the gift card numbers and they required I read them over the phone. But after about 40 minutes they had combined 9 cards into one, and then I used that to purchase my tickets. Hopefully that helps someone.
I would LOVE to know how you got this done as both the Diamond line and Delta on twitter says you can not do this. Nor is this option stated anywhere on Delta.com

All the gift card links on Delta.com just put up the standard Delta 800 number. I too would LOVE a number to Delta that could get this done!
