Last min trip: France (outside Paris) with kids, suggest an itinerary?

Hello!
We're booking a very last-minute trip to France with a 5 and 7 year old. We can only travel for a week and are flexible on how little time we spend in Paris (or departure/arrival city). Can you suggest a location that's doable assuming that realistically we can probably only have 5 nights in either a hotel or home rental outside of our arrival/departure locations?

Ideal scenario is more mountain towns, country, beautiful drives, great eating, walks, etc (less interested in water/seaside destinations for this trip but would consider if that's obviously far more doable in the little time we have.)

The kids have never been to the south (I've visited Le Lavandou, Bormes les Mimosas, St. Tropez). We're looking more for central area we could explore but perhaps also take a day trip or two. Willing to travel by train, rent a car, etc. Love agritourism farm stays, house rentals, hotels. Anything goes as far as accommodations.

I realize this is a wide net, open sky. I just need a little initial guidance on "here's a spot to stay where things are more highly concentrated." It seems there's so many destinations that I'm not sure where to focus or begin. We're celebrating our 10 year anniversary but due to some difficult family circumstances have really not been able to focus on this til now.

Travel time is end of June.
