As you will have gathered, there are quite a lot of variations in the fleet at the moment, and in fact I would hope your aircraft does get swapped out to a newly refreshed 747. There is a programme on for this, and so an equipment change is possible. But by all means give us some more information so we can be sure to give correct guidance.
The TV stalk goes well above the table, so you can use both, the only factor to bear in mind is that when there is something on the table, such as a tray of food, it gets tricky to put the TV away, or indeed get the TV out if you didn't do that first. From what you've said so far, the IFE is not very good, you need the refurbished aircraft for that. All 747 seats recline, the couple seats are popular with some, but as you indicate they are near the rear galley / WCs. On a relatively short day time flight that may not be such a big deal, and you would be well placed to get top up refreshments from that rear galley.
