Ubud will show you a different side of Bali, especially if you can lunch in a nice chilled local place overlooking on of the local padi fields

Maybe an afternoon walk around one day in Kuta (if anything to get the mass tourist yearning out of the system, usually good to do on your first trip to Bali)
Anyway - get out of the Hyatt on your first few days if you can and go for a wander.
Figure for the wedding days you'll experience enough of the resort
Bali is a really great cultural destination that also has beaches and scenery, and I'm a big fan of Ubud. It's cheap, not as clogged by hawkers, and you can see a kecak dance or a show with a gamelan orchestra just about any night. There are also temple festivals and places like Besakih (where a lot of tours go). I liked walking the black sand beach around Candi Dasa. The whole island is rich in possibilities even though it takes a bit of effort to get out and see.
