SLC is a fantastic airport for these short connections. 99% of the time they do work ie why delta books them. Airports like JFK are so delay prone an hour connection there you are more likely to miss than this 30 minute one. If you miss the flight they are going to fly you SLC-AMS-CDG most likely not the end of the world.

If i were you though i would take one earlier flight from LAX and just have a longer layover in SLC that way even if there is a delay you will make it. Eat a nice non airline meal before the long flight. Get some walking in before the flight too. Also not sure your location but they would also probably let you rebook LGB/SNA/BUR/ONT-SLC-CDG if that is closer to your house too since that connection is so tight and you clearly didn't cause the strikes. The change is already an inconvenience on your if one of those airports is closer i would request they do that.
