Very much not ideal, but SLC is the airport to do this at. It is well run and I think you stand a good chance of making your connection.
Alternatives to consider:
LAX-AMS-CDG all on KLM (this would be my choice because I prefer to take one flight to get to Europe where there are lots of options to get from AMS-CDG even if you are late)
LAX-JFK-CDG all on Delta
LAX-SEA-CDG all on Delta

This is false. I just checked and DL is selling DL2612 (LAX-SLC) connecting to DL106 (SLC-CDG) with a 30 minute connection at SLC on Delta.com. So at least this means that if OP booked this that DL would handle and not charge for any rebooking that needed to happen.
