Book the flight you know you personally can make it to 100%. If that's the 8PM one, book the 8PM one (and waitlist/standby for earlier or even SDC). If UA doesn't get you there on time to make your connection, that's on UA. If you miss the flight because of traffic / work, then that's on you and rebooking depends on a more sympathetic agent.
