IME generally speaking from the EU the gate screening consists of a possible additional security screen (metal detectors etc) but mostly someone asking me questions about my baggage (did I pack it, did I let it out of my sight etc). From Asia is where I've seen the hand inspection of carry-ons, and in terms of liquid confiscation it's only occurred to me coming from China. In fact I did bring on water on my last flight from HND - there were screeners on the jet way but no one said a word as we boarded.
