Personally I would just take the 767 from SLC (if DL is willing to move you to it for free, which it seems like they should given the circumstance). The 767 is one of the nicer rides in coach, especially if you are traveling with one companion, as the seats on the sides are 2x2, with no middle seat. If available, I personally think the Comfort+ bulkhead is nice on these, with nobody reclining into you and decent leg room. Of course, you'll need to store carry ons in the OHB's for takeoff and landing, and you will probably have to pay extra to sit there. Would not hurt to ask to be placed in C+ for free given the reroute, though I am doubtful they will say yes.
