My experience at Courtyard Bistros is that they're usually well below capacity, even at prime breakfast times. Serving Platinum guests would not overwhelm most Bistros. There are undoubtedly some properties where the Bistro would require an additional employee in the morning. Also, adding a few "zero wait time" breakfast items to the menu might help.
One of the reasons that Bistros are currently under capacity in the mornings is the prices are very high for what you get, and the service is usually pretty slow. It's a very limited menu as well. I have eaten at them a few times, usually when my rate includes a voucher, but I would not use my own money. There's almost always a McDonalds or Dunkin Donuts or Denny's or whatever nearby that's a better value with better food and service.

That said, there are so many Plats and Golds out there these days that on Tuesday through Friday mornings, a sizeable portion of the guest total could be eligible.
