I had heard availability in Business and First is pretty stingy on CX, but didn't think that issue would exist with in economy. Does anyone with experience in this type of redemption have experience on what to expect? The agent had said that availability can change day-to-day, so I was thinking about calling in every night until I can get something for both legs.

Any insight would be very helpful, thanks for reading!
part of your problem is that you cannot use AS miles for CX codeshares. It must be CX coded and operated. No Dragon for example. While CX has 6-8 daily non-stop flights, none are available in Y on the 3 days in June I checked. However, HKG-BKK-SIN is available on June 19 for example for 2 adults.

I recommend you check availability on Qantas and then spoonfeed the flight info to the agent. Do you know how do check on Qantas?
