Looking at the Israel Ministry of Foreign Affairs rules for student visa, I don't see the requirement for proof of return to US. The visa is valid for 1 year, perhaps it's the US that requires return? More likely Israel just wants you out after the year and don't really care which country you go to after the visa expires.

You may wind up having to Book a one way from USA to Israel and then buy another one way once that option opens up or clarify rules and bop around Europe after the year in Israel. That's a fair amount of time to find a deal home.
