Round Trip Ticket, returning more than a year from now?

Hoping an expert can help! A colleague of mine is studying abroad in Israel for the next school year, June 2018 - May 2019. In order to to get a student visa, she must prove that she has a return ticket to the United States. However, because her studies don't end until May 2019, which is after when Delta is currently selling tickets for, she's not sure what to do. She isn't planning to return for any school breaks or anything. When she called Delta, she was told that she could book a ticket that returns in March, as far as they are currently booking, and then pay a $300 change fee to change her return flight - with the caveat that she can't change it past one year from the date of issue, which doesn't really help her if it's issued in April 2018 and she needs to come back in May 2019 (which also sounds wrong to me - doesn't she have a year from the date of the trip, not a year from the date of issue?) Any advice would be appreciated - I recommended she try to speak to a supervisor who would make a note to waive the change fee since they aren't able to issue the ticket that she needs, but I'm not sure if that's actually a possibility.
