Not as stated, no. The reason it's coming out so cheaply is that it's pricing out as a HKG fare with stopovers. You wouldn't be able to skip or reroute to avoid HKG.
However, try pricing EWR-NRT / ICN-EWR on one ticket and NRT-ICN on a second ticket. That may be cheaper.
