IF I understand correctly you'd take a car in DE and drive to UK and back? Bear in mind that dropping an EU car in the UK comes with an hefty drop-off fee so I'd be wary of one way rentals from EU to the UK
Otherwise no need to worry about insurance, you'd be covered while driving in the UK
