Spend during the stay should count. However, given that this is Hyatt IT we're talking about, you'll probably have to request credit after-the-fact on a case-by-case basis.

Incidental Charges. Members may earn points on Eligible Incidental Charges, even when paying Ineligible Rates. Five (5) Base Points will be awarded for each whole U.S. dollar or U.S. dollar equivalent paid by a Member for Eligible Incidental Charges that are charged to the Member’s room or guest folio.
