Which brings us to the traditional suggestion of Oman - which has beach, food, decent hotels (there's a strange market manipulation on in BDA), city life and countryside. And a lot cheaper. Cyprus would be another place with lots of options. Amman or Tel Aviv/Israel perhaps. San Diego. México, Malaysia.
I wouldn't choose Cyprus. They have chosen the wrong time zone to maintain their Greekness. Consequently, it cools off and darkens by 4:00pm and is uncomfortably cold and gloomy very soon thereafter (although warmer than the UK, of course). Most hotels close down for winter, many restaurants too. I'd take the Canaries any day for Christmas before I'd go to Cyprus in midwinter.
