Took my kids on the Carnival Pride, and if memory serves, the id cards did have a age indicator (not a b-date, just different coding). Royal Caribbean punches holes in their id cards if you're under 18.

See the faq below. You'll be fine taking him with you, especially since he's over 18. The servers don't care and no one was checking ids at any clubs on the Pride. They just want the kids out.
