I'm non-Chinese-speaking, and we've been going to HKG every year for 10+ years. If I want a great meal with nice service, I usually go to a hotel restaurant. I like Spring Moon, Tang Court, Golden Leaf... these are all expensive with great service, but not ultra-expensive. Ye Shanghai is not Cantonese, but they're good. The ultimate splurge in my mind would be a dinner buffet where you get to try a little bit of everything including fabulous desserts. Nothing in America compares to dinner buffet at a HK 5-star hotel.

This is from personal experience. YTH is well worth its 2 stars, the refinement is exceptional. I had dinner there. Only downside is that the IC is about to undergo a renovation and there will be construction everywhere although YTH will apparently remain open. The restaurant has superb views of HK harbour and is hushed and nicely fitted out.
I’ve been to Ming Court about 4 times now, both for dim sum lunch and dinner, still very good.

Well, I'd say those are safe choices to recommend. However, YTH is not one of my favorites. Great service, but I just found that things tasted a bit bland there. Might just be me. Also, I've dined at the window-side table but I don't remember the view from YTH being anywhere nearly as great as what you get from the Harbourside buffet or the lobby lounge.

I totally agree. It's good, but the portions are incredibly small. I've heard people say Mak's is better than TCK. I've heard people say each wonton at TCK is too big. I don't understand. TCK's shrimp wontons are awesome. As long as the quality is good, the bigger the better. I guess to each his/her own. TCK's noodles are great, too. Mak's portion is like an appetizer.
