I only added Nice since a few work colleagues said it's a good home base to visit other places. I do plan on doing most of the sightseeing alone and joining a tour to see Eze.
If you rent a car then I would highly suggest splitting your time between Chateau Saint-Martin & Spa in Vence and Grand Hotel du Cap Ferrat (FS). That's the combination we do in August and it's just perfect. Chateau Saint-Martin & Spa is rustically French in a beautiful setting at a high elevation with a superb restaurant offering some of the best views on the whole of Cote d'Azur and FS Cap Ferrat is by the sea. Also, if you stay in Vence you're not too far from Antibes for a day trip and St Paul de Vence (mentioned earlier by another user) is lovely. Being an Oetker property the service at Chateau Saint-Martin is perfect and you will really feel like you are in Provence. Four Seasons is great for other reasons such as the beautiful pool / views and utterly stunning service (it is a Palace hotel). Both properties keep us coming back year after year.
