There is a lot of information in guide books and online about Fukuoka and Beppu. It may not be cruise-specific, but it should give you some idea of the possibilities in those places. The advice you'll get here will be better if you have looked at some background info:

FWIW, my grandfather visited Beppu on a cruise ship in the 1930s. It has been "on the beaten track," for many years now.
