One of three things: (1) You were connecting through HKG so that you weren't checking in at HK and didn't have to pass security in HKG and come under the gaze of the canis cerberus at security checkpoint before immigration, (2) your bags weren't really oversized (overweight they don't really care if you are flying F), or (3) you are lying.
The CX F check-in staff (and the J class too, if they are feeling friendly) will eye your bag and, if they think your bag is too big, offer you a special BX-T tag which allows you to pass undisturbed by the guards. The tag has a tear-off which the canis cerberus will keep. These tags are numbered and are highly coveted among the riff-raff not given one.
The HKG gate bag check is one of the most beady eyed in the world, and an annoying blemish in an otherwise excellent airport.
