Try the Barceló (i believe there's 2 in Playa del Carmen, they're next to each other) it was amazing. I went there a couple of years back and I would gladly go back if I ever get to go to playa del carmen again. To be precise I stayed in Barceló Maya Tropical. Holy Molly. They had buffet for breakfast, lunch and dinner (they serve of a limited period of time each meal) in the main dinning hall. Amazing food, all the kinds you can think of, You have chefs that take some requests. You also have "snack bars", a couple of them around the pool area that also serve a bunch of food. There's 24/7 drink bars, around the pool area mostly. You also have some sweet bars that serve ice cream and cake, cookies, popcorn... Also 24/7. They have activities inside of the hotel like snorkeling, water bikes, water bicycles, a dolphin pool, a kind of theatre where they do shows each night. You also have selected restaurant to eat things like Mexican, steaks, Asian food... These only serve at dinner and are payed. You have a bunch of outside activities and tours at the lobby if you like. Overall it is awesome, the pool is great, the beach is beautiful. You can sit and see the sunset with a couple of drinks. The rooms are quite comfortable. Everything was so great that I got to the room so tired that I didn't have time to care for it ajjj (also I was almost never in the room) wifi wifi everywhere... Just look it up. Ahha if my description wasn't enough. I also believe all of the AI to be amazing but I only know this one
