It looks like Xiamen and Hainan airlines both use the same airplane, the Boieng 787 for that transpacific flight, but I'm reading about all the financial issues Hainan is dealing with right now with missed payments and suspended trading of their stock so I think it might be safer to avoid that Hainan flight in case that might affect their flights.
I thought you are going to Taipei and then go from Taipei to Xi'an. If you are travelling in Y class, there's really not a big difference. If travelling in Biz class, XiamenAir is better. Their biz class seats have direct aisle access. If you are worry about the financial issues, then just avoid Hainan Airlines, but I won't worry about that too much.
Xiamen as the layover city is better than Changsha, so I may prefer XiamenAir.
