This. The galley and lav config is AC’s choice. They could have opted for a rear lav setup similar to what their current A320s have, but went with the current option to fit more seats in. The front galley though is space constrained based on the design of the 737 though.
Airbus offers a similar rear galley/lav config option. Although I would have preferred A320neos, even if AC went with that option, I think the cabin experience would only be marginally better than what you experienced on the 737max
