For instance, I bought a LAX->HKG and a HKG->NRT ticket and the 2nd leg departs 7 hours after the first one but because I did not buy it as LAX->NRT but rather than 2 separate legs, I am not sure if CX will check my bags through NRT?

Could anyone provide guidance or insight? I tried calling but they put me on hold for 30 minutes and I gave up lol
Yes, you can. I did YVR->HKG before and the agent was more than happy to check my baggage through to TPE on a separate ticket. Mind you that check in has to be opened for the NRT flight or else they won't be able to do that.

I'm not 100% positive due to different rules with flights to China, but I think you can.

At the time, I had a 26 hours stopover in HKG to Japan on one ticket, but the agent refused to check my baggage through. So when I arrived in HKG, I just popped upstairs to departure and dropped off my luggage before I headed out to the city.

Hope this helps.
