The airport hotel is airside. I very strongly doubt that they will scan your bags for alcohol, so even if drinking is supposedly forbidden, who will ever know? Entering Qatar, they (=customs) will scan your bags and temporarily confiscate alcohol (but you can get it back when leaving)
When entering DOH on transit, some flights go through security, and some do not. If you go through security then the 100 ml rule applies, so any liquid in containers that are more then 100ml in size will need to be in sealed bags. And when leaving DOH, certain flights have secondary screening (Australia, USA), where the liquid rule applies.
