Hello. I'm pretty new to ANA and points in general. I have some AMEX points. Recently booked a class K flight on ANA (YVR-TYO), but just realized that it's not eligible for miles redemption. ANA website says Economy class must be G, E, Y, B, M, U, H in order to upgrade.

K is as stated non-upgradeable, be it via cash/points/miles etc. Cancel and rebook, or just fly as is.
FYI, if you were to use Amex points, you would first need to transfer them to ANA miles, then use a miles upgrade on ANA.
(upgradeable classes are as you have found out already)
