all of the above was moot as I did not find the SIM card kiosk after baggage. I ended up borrowing a SIM from a family friend for using Uber, and whatsapp if I got lost while out shopping.
Yes, but no one stated that verification phone call will take place in the middle of the night.
Verification process usually starts in English with switch over to Hindi or local language as need be at the customer's end. Unlikely that verification call in Mumbai will be conducted in Gujarati (unless caller happens to know gujarati and is willing to oblige).

Indian mobile number has become a big pain for not only tourists but also for NRI, non-resident OCI especially on personal travel. From Ola to Banks to PayTM to Doctor's office, everyone has started to use Indian mobile number as primary ID in their systems (similar to how social security number was misused in USA until recently)

There is no good legal way for non-resident (Indian or Foreigner) who visits INdia less frequentlly than say every 4 months to maintain an Indian SIM. (there are many not so legal work arounds like most things in India with its moronic bureaucracy)
