On my Sony (Android) after switching to airplane mode, you can manually enable Bluetooth connection while keeping airplane mode on.
Watches and small devices are indeed hard to be tracked by flight attendants, but wireless headphones are easy to spot. I was never bothered by Lufthansa staff on flights with them.
