I would not do it, and I fly all the time. What airline you are on matters, but lets pretend you are flying United. You land, and the plane taxies the gate. Lets say by the time you are actually off the plane you now have 1:30 before your plane takes off. You need to be back at security at the absolute latest 45 min before your flight. So you now have 45 min to get to In and out.
Lets be generous and say you can get an Uber and get to In and out in 15 minutes. (Technically possible, but not very likely). You have a half hour left. Thats 15 minuets at In and Out. (If the line is long you are screwed - its always long), and 15 minuets to get an Uber and back to the terminal.
The best chance you would have is to keep the Uber and have him run you through the drive thru, but even then its a crapshoot based on the line. And if the driver is willing. And it would be expensive.
There is construction all over Terminal 1, so cars can take forever to get to thr proper drop off and pick up points.
The only way I would be willing to try is to get picked up and dropped off at International Terminal. Which would require navigation on foot of most of the airport. If you are an inexperienced traveler- this plan is not for you.
